Indian-inspired Flatbread and Crispy Cumin ‘Puri’

Papar or Papadoms are store-bought accompaniments to most Indian meals. We love to eat this, particularly with Biryani and can be served as part of a snacking board for larger gatherings. They may be purchased at many large retailer or at your local store selling Indian groceries. Follow the package instructions by frying and draining on a paper towel.
You may also purchase the flatbread from your local grocery store or attempt making your own with the following recipe:
Ingredients
3 cups Self-raising flour
1 tsp salt
1 tbsp sugar
Half a cup of yoghurt
A quarter cup of oil
Warm water to bind
Method
Mix well in a stand-mixer, smearing oil over the dough to smooth it out.
Leave to rise in a warm place.
Once ready to use, roll into small disks and toast on a dry, hot pan on both sides.
Baste with butter, black sesame seed and coriander.
Finish with a light sprinkle of sea salt flakes.

For the Puri
You may omit the cumin seeds and use this recipe for traditional puri. Puri is traditionally eaten with gravy-rich dishes and is fried to give it an authentic puff and taste.
Ingredients
2 cups flour
1 tbsp sugar
Half a tsp salt
1 heaped tbsp slightly crushed cumin seeds
2 tbsp butter
Half a cup water
Quarter cup milk
Half a cup buttermilk
Half a tsp melted ghee
Method
Rub the flour, sugar, salt, cumin seeds and butter together to form breadcrumbs.
Warm the water, milk and buttermilk, but do not boil it.
Add the liquid slowly to begin forming a soft dough. Do not add the liquid all at once.
Rub ghee in your hands to start binding the dough.
You may use a cutter to get neat, even shapes.
Fry in hot oil and serve immediately.
Serve with store-bought chutneys and sauces to dip. Below is a recommended list:
